Our pastry and bakery training academy in Chennai, India is seeking a highly skilled and experienced Head Pastry Chef to lead our team and oversee the practical bakery and pastry production. We specialize in European style pastries, chocolate, cakes, breads, confections, and other related products. Our academy aims to provide comprehensive training and education to aspiring pastry chefs and bakers. The Head Pastry Chef will play a crucial role in maintaining the quality and standards of our training programs.


Responsibilities:

1. Practical Production:
The Head Pastry Chef will be responsible for overseeing the practical bakery and pastry production. This includes creating European style pastries, chocolate work, cakes, breads, confections, and other related products. The candidate should have a minimum of 10 years of industry experience in practical bakery and pastry production.

2. Teaching and Training:
The candidate should have experience in teaching and training. They will be responsible for imparting their knowledge and expertise to our students, ensuring that they receive the necessary training and guidance to excel in their pastry and bakery careers.

3. Communication and Teamwork:
The Head Pastry Chef should have excellent communication skills and fluency in English, Tamil, and Hindi. They should be able to effectively communicate with team members and students, providing clear instructions and guidance.

4. Food Cost and Menu Planning:
The candidate will be responsible for managing food cost and menu planning. This includes creating cost-effective recipes, analyzing food costs, and ensuring that our menu offerings are profitable and aligned with industry trends.

5. Scheduling and Procurement Planning:
The Head Pastry Chef will be involved in scheduling work and procurement planning. They should be able to effectively manage the production schedule, ensuring that all orders are fulfilled on time. Additionally, they should have experience in procuring high-quality ingredients and equipment necessary for the production process.

6. Large-Scale Production:
The candidate should be able to work on commercial large-scale production for our own requirements. This involves managing production processes efficiently and ensuring consistent quality. Experience in large-scale production and knowledge of production techniques for high-volume orders would be advantageous.


Qualifications and Requirements:

- Minimum of 10 years of industry experience in practical bakery and pastry production, 5 years of experience as an Instructor, specializing in European style pastries, chocolate, cakes, breads, confections, and related products.

- Fluent in English with excellent communication skills.

- Experience in teaching and training is advantageous.

- Strong knowledge of food cost management, menu planning, scheduling work, and procurement planning.

- Ability to work on commercial large-scale production for internal requirements.

- Passionate about pastry and bakery arts, with a strong commitment to quality and creativity.

- Strong leadership and team management skills.

- Excellent organizational and time management skills.

- Ability to work in a fast-paced environment and meet deadlines.
